Potatoes au gratin

You can replace the potatoes with rutabaga or turnip. But it will not taste the same. We prepare this dish only on special occasions, since we try to eat less potatoes as possible.

Vegan peas and potatoes stew

I feel kinda bad to share this recipe, since it’s not a keto recipe. I can always say replace the potato with turnip or rutabaga, but then….what do you replace the peas with??!!

Just don’t be mean to me for sharing this recipe. My family (especially the my older kid) really loves this dish. Maybe some of you will prepare it, in a cheat day.

Keto “potato” salad

Ingredients:

  • 4 cups radishes
  • whites from 6 hard-boiled eggs
  • 1/2 cup sliced pickles
  • 1 cup olives (I recommend to chopped them – I didn’t, but I realized that too late)
  • juice from one lemon
  • salt
  • fresh ground black pepper

For the sauce:

  • 6 yolks from hard-boiled eggs
  • ½ cup keto mayo
  • 1 tsp yellow mustard
  • 1 tbsp pickle juice tbsp
  • 1 tbsp chopped dill

Directions:

Peel eggs and separate yolks, set aside.
Wash the radishes, trim the tops and cut them in slices.
Place the cut radishes in a pan with the just enough water to almost cover them, and bring it to a boil over high heat. Then reduce the heat to low, cover and simmer for 5 minutes.
Drain the radishes and set them on a towel with a paper towel on top, and let them cool for 15-20 minutes.

In a food processor, add egg yolks, mayo, mustard, pickle juice, and chopped dill, and blend until smooth.

Cut the egg whites into small bite size pieces.
Cut the pickles into slices.
NOTE: as a recommendation – slice the olives too.
In a bowl mix the egg whites, with the sliced pickles, and olives.
Pour over the sauce (from the food processor), add the radishes, and mix everything together.
Add the lemon juice, salt, and fresh ground black pepper.
If you prefer your salad a little more sour, you can add additional lemon juice, or even some apple cider vinegar.
The salad taste better if it’s left in the fridge for a few hours.

Baked delicious potatoes

NOTE: I know that potatoes are not keto, but once in a while, you can enjoy them with no remorse. This is a recipe my mother used to cook for us, when I was a kid. She added fresh chopped dill (because I really love dill), and even cheese. If you want to add those additional ingredients, feel free to do it. I’m telling you – you will not regret it! But for this specific post, this is a simple recipe version.

Ingredients:

  • small potatoes
  • dehydrated veggies powder – like a healthy Vegeta 
  • oil

Directions:

Boil the small potatoes. Once boiled, remove the skin. Add the dehydrated veggies powder and oil. Mix everything together gently, so the boiled potatoes will not brake.

Bake them for 15 minutes one each side in a preheated oven at 370 F.

My family ate the potatoes prepared like that with some meat, and one time with feta cheese.

Homemade potato fries

I know that potato is not good in keto eating, but once every few months, it’s not that bad. If you really crave them, try a few, and you are done.

Ingredients:

  • potatoes
  • oil

Directions:

Peel the potatoes, wash them, and them cut them in strips.

Heat some oil, and fry the potato strips on medium heat.

I usually eat the fries with garlic sauce.

Rutabaga vegan stew

I wanted to cook a vegan potato stew. But potatoes are not good for keto. Since rutabaga is considered the best replacement for potato, I tried an old recipe using rutabaga instead of potatoes .

Ingredients:

  • one big rutabaga
  • 2 onions
  • one bell pepper (I used 2 half)
  • oil
  • tomato paste
  • black pepper
  • salt
  • bay leaf
  • fresh dill

Directions:

In a pen, add the oil, and sauté the onions. Add the chopped bell pepper. Then add the tomato paste. Sauté all together like 10 minutes.

Add the rutabaga cut in cubes, mix it all together, and let it sauté for 15 minutes. Stir the ingredients for time to time.

As an advice – try to cut the rutabaga in small cubs. I cut it in bigger cubs, and it took forever to boil.

Add water, salt, black pepper, and bay leaf. Let it cook at medium heat until the rutabaga is soft. For me it took a while – I think around 1.5 hours, or maybe even 2. Hence the reason to cut the rutabaga in small cubs. If you need to add more water, add boiling water (not cold).

Add the fresh chopped dill, let it cook for 3 more minutes.

The dish was okay for me. I wish I had more liquid in my stew. But because of my big rutabaga cubs, it needed a lot of time to cook, and most of the water evaporated.

My husband was fine with the stew, but my mother in law couldn’t stand it. She thought it was not good. 😥 Maybe I should stick to rutabaga fries…

Breakfast: one yogurt + one sandwich with gluten free toast and turkey ham

Lunch: We bought lunch, since I was in a hurry in the morning, and I didn’t have time to pack a lunch. The food was salmon with cauliflower puree, and green beans. The puree tasted more like potato  puree than cauliflower, but I liked it.

Dinner:  polenta with herring in olive oil (from a tin) + chicken with garlic sauce + one small mint with chocolate ice cream

Today I had tea, and some water. And I started drinking green tea again. I really hope this green tea will be okay for my body, since I don’t have the gallbladder anymore.

My food on March 19

Breakfast: one yogurt, and 1/4 cup of raisins covered in milk chocolate

Lunch: steak with cucumber + 1/2 cup of cottage cheese

Dinner: one yogurt with 2 pieces of toast + chicken with garlic sauce + 1/2 baked potato

Snacks: I had plenty of snacks today: one crispy rice bar, 1/4 cup mixed nuts, 1/4 cup of strawberries, one piece  of dark chocolate, one sugar free mini chocolate

I had tea, water with lemon, and 1/4 cup of orange soda.

Breakfast – one gluten-free bagel toasted, with 1/2 cup of milk

Lunch – steak with cabbage salad

Dinner – one yogurt + one ice cream + 3 small baked potatoes with garlic sauce. I will give you the garlic sauce recipe in another post.

I know that potato is not a keto vegetable, but if you eat a baked potato, you can add sour cream, bacon, and butter. And maybe some green onions on top.
