Baked salmon

Ingredients:

  • 9 pieces of salmon
  • oil to generously coat the salmon
  • 1 tbsp salt or to your taste
  • 1/2 tsp smoked paprika or to your taste
  • 1/2 tsp garlic powder or to your taste
  • 1/2 tsp ground black pepper or to your taste
  • 1/2 tsp sweet paprika or to your taste
  • 1 tbsp dried parsley or to your taste

Directions:

In a little bowl, mix all the ingredients (not the oil and the salmon).

Put the salmon in a baking dish and generously coat each piece with oil.

Sprinkle the seasoning on top of the salmon.

Bake in a preheated oven at 450 F for 12 minutes.

Then switch to broil for 3-5 minutes.

Serve it with cauliflower rice.

Breakfast: nothing

Lunch: salmon + cauliflower rice

Dinner: lots of cheese + steak + roasted veggies

Snacks: some pork rinds, some ice cream, 2 plums, some grapes

Water and sparkling water for today.

Baked potatoes with garlic and tomato sauce

A recipe that my kid loves, just because he loves potatoes. I know potatoes are not keto, but once in a while, you can have some. Life is short and should be full of flavors. Just give it a try. Also, this recipe is gluten free, vegan, and paleo (I think 🙂 )

Chocolate round brioche

Ingredients:

– 1 1/2 cups egg whites

– 1/4 tsp cream of tartar

– 1/3 cup xylitol

– 1 tsp vanilla extract

– 1 1/2 cups almond flour

– keto chocolate cut in small chunks – 1/4 cup

Directions:

In a mixing bowl, beat the egg whites with the cream of tartar for 5 minutes. Then slowly add the xylitol. Mix for 5 more minutes.

Then add the almond flour, 1/4 cup at the time.

Transfer 2/3 of the mixture in a round 9 inch silicon pan. Add the chocolate on top and then add the rest of the mixture. Spread it evenly.

Bake in a preheated oven at 375 F for 25 minutes.

Let it cool a little bit before removing it from the pan.

The result was good, even my mother in law liked it.
