Crustless Pumpkin pie
Ingredients:
– 5 small eggs
– 1/2 monk fruit (or any keto sweetener)
– 7-8 drops of Stevia extract
– 100 ml avocado oil
– 370 g pumpkin purée (homemade, but you can use from a can)
– 200 g almond flour
-50 g coconut flour
– 2 tsp baking powder
– 1 tsp cinnamon
Directions:
In a bowl mix all the ingredients.
Then s transfer in a 10 inch buttered baking pie pan.
Bake in a preheated oven at 340 for 40-50 minutes, or until it passes the toothpick test.
The result was good, Probably I will prepare it again.

Chicken & quinoa cassorele
Although this is with quinoa, feel free to substitute quinoa with a keto rice or other vegetables to create your own original combinations.
How I cook my bacon
This is my way to cook bacon – in the oven. Because it gives me time to do other things. This video has 2 methods – use the one that is better for you. Or why not – use both of them.
Keto braided sweet bread
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 eggs
- 1 tsp baking powder
- 1/4 cup erythritol
- 1/4 cup keto brown sweetener
- lemon zest (one lemon)
- orange zest (one orange)
- 1 + 1/2 cups shredded mozzarella cheese
- 2 tbsp soft butter
- 4 oz cream cheese
Directions:
Microwave the cheeses for 1.5-2 minutes.
Then add the rest of the ingredients. Combine well to get a dough with uniform texture. Then wrap the dough in foil and put it in the fridge.
Let the dough sit for 30 minutes in the fridge. Then split it in 3 parts – three braids.
Make a 3-strand braids bread.
Of you want you can add some egg wash on top. I skipped this step, because I was a little lazy. I only added a little sesame seeds on top.
Bake in a preheated oven for 35-40 minutes. Mine turned down a little darker, but not burned.
Let it cool for a few hours before enjoying it. My sweet bread did not raise as much as I wanted, but the taste was good.

Baked pork loin in soy sauce and garlic
This was a good recipe, that I made it in a hurry, because I had some pork loin in my fridge, but I also had to finish something for work. So, I took dome breaks from work, to make this dish. The result was good, and my work was turned off on time.
Ingredients:
1.5 pounds pork loin
2 tbsp garlic sauce or minced garlic
1 tsp black pepper
1 tsp salt
2 tbsp soy sauce (gluten free version)
