Meatballs with more veggies (again)

I admit – I really like meatballs. And because I prepare them very often, I tend to change the recipe, from time to time. So this time, I wanted to clear my fridge, so I added all the veggies from my fridge (sh….it’s a secret – my kid had no idea he ate mushrooms in those meatballs). So, let’s start.

Ingredients:

  • 2 pounds ground pork
  • 1.5 cup broccoli
  • 1 cup cauliflower
  • 1.5 cup carrots
  • 1/2 cup mushrooms
  • 1/4 cup bell pepper
  • 1/4 cup green beans
  • 1 big onion
  • 3 eggs
  • 6-7 garlic cloves
  • salt
  • ground black pepper
  • 2 tsp Italian herb blend

Directions:

Steam the vegetables. Let them cool off. Then squeeze all the water from the vegetables. Then ground them using a food grinder.

Chop and sautee the onions.

Then transfer the sauteed onions into the bowl with the meat, and then add the rest of the ingredients.

Let the mixture sit in the fridge for at least 15 minutes. Then make balls in a medium size – I used an ice cream scoop.

Fry them in the air fryer, at 400 F for 15 minutes on one part, then for another 15 minutes in the other side.

Meatballs with vegetables – Delicious!

Ingredients:

  • 2 pound ground pork
  • 1 1/2 cup steamed vegetables (broccoli florets, cauliflower, carrots)
  • 6-7 garlic cloves
  • 2 big onions
  • salt
  • ground black pepper
  • 2 egg
  • 1.5-2 tsp Italian herb blend (you can use any herb you like, actually. I normally add fresh dill, but my kid likes more the Italian herbs, so I prepare them for his liking)).

Directions:

Steam the vegetables. Then ground them – I used the same food grinder I used for my meat. In the same time, ground the garlic too.

Chop and sautee the onions.

Then transfer the sauteed onions into the bowl with the meat, and then add the rest of the ingredients.

Let the mixture sit in the fridge for at least 15 minutes. Then make balls in a medium size.

Fry them in the air fryer, at 400 F for 10 minutes on one part, then for another 10 minutes in the other side. If needed, you can fry them for a few more minutes, but make sure not to burn your meatballs.

The result was good, my whole family really love them.

I might think of this, as my favorite meatballs recipe. You have the meat, you have some veggies, and you air fried them. Delicious!

Homemade pickled veggies

Ingredients:

You can use any vegetables you have in the house. For this specific recipe, I used only what I had, but you can add more. This is a recipe for assorted vegetables, so be as creative you want:

  • green tomatoes
  • cucumbers
  • onions (I put only white onions, but you can put the red onions too)
  • cubanelle peppers
  • cauliflower
  • 1/2 cabbage
  • some fresh dill (no more than 2 tbsp)

You will also need:

  • salt
  • vinegar
  • bay leaves
  • some sterile jars

Directions:

Chopped the veggies and weight them. Put them back in a bowl. In this bowl, for each kilogram of chopped veggies, add one tbsp salt. For people who are not familiar with kilograms, use 1/2 tbsp salt for each pound of veggies.

Leave the veggies with salt until morning (a little more than 12 hours). You will notice that some liquid was accumulated on the bottom of the bowl. Add 1 tbsp of vinegar for each kilogram of veggies (1/2 tbsp for each pound). Mix well.

Placed the veggies in jars, making sure you press the veggies with your hand, so no air is available in the jars. Once the jars are fill in with the veggies, add one or two bay leaves, and pour the water that resulted after salting. Don’t seal them immediately – you might need to add more liquid in the jar.

Let the veggies pickle for at least one month. I personally love them.

Vegan vegetable stew

Ingredients:

  • leeks
  • potatoes ( not keto friendly, but add a few for taste)
  • bell peppers
  • peas
  • cauliflower
  • cabbage
  • carrots
  • tomato sauce
  • dill
  • salt, black pepper, bay leaves
  • oil

Directions:

In a pot, sauté the chopped leeks and bell peppers.

Chopped all the other vegetables. Add them all over the sautéed leeks and bell peppers.

Note: you can add any vegetable that you like. Actually, the more vegetables you add, the better the taste will be.

Pour water to cover the vegetables. Add salt, black pepper, and bay leaves. Cook it for 30-45 minutes on medium heat.

When the vegetables are cooked, add the tomato sauce, and fresh chopped dill. Cook it for 5-10 more minutes.

When I eat it, I usually add more chopped dill on top.

Day 17

January 30, 2019

Breakfast – no food. Just one green tea

Lunch –  broccoli  + pork chops + cheese + two egg muffin.

Dinner – 2 coconut biscuits with smoked fish dip + 1 cup of pickled veggies

Snacks – lots of gum + one square of 90% black chocolate (0.75 gram of sugar) + 1 cup of pork belly rings

During the day, I had tea, water, and  one diet soda.

Day 12

January 25, 2019

Breakfast – nothing – just green tea

Lunch – Salad with 2 boil eggs, and 2 small avocado + cheese

Dinner – pork with tomato sauce + 1 slice (very thin) of lupin bread + mixed pickled veggies

Snacks – 1/2 cup sunflower seeds + chewing gum + 1/2 pork belly chips

During the day, I drank water and tea.

No physical exercises.
